Poinciana Plaza, at the corner of Airport-Pulling Road and Golden Gate Parkway, is now a stop for coffee and an early workout. Three businesses have opened in Halstatt's new retail building: a strength studio, a Pilates studio and a drive-thru Starbucks. Their hours are built around the early part of the day. The spaces Halstatt is still leasing are the ones meant for a restaurant, and that gap explains what the corner offers today and what it may offer next year.
The building is small. Halstatt, the family-owned Naples investment firm behind the project, announced the retail center's completion on a page dated May 28, 2026, with a June 2 dateline in the release. It describes 10,000 square feet of new retail as the final phase of a professional park that now totals 115,000 square feet. The new building adds less than a tenth to the park, so the story is about which businesses moved in more than about size.
What has opened so far
Here is where each tenant stood in early October 2026, based on what the businesses and local outlets have published.
| Tenant | What it is | Status as of October 10, 2026 | What the record shows |
|---|---|---|---|
| Discover Strength | Trainer-led strength sessions, 30 minutes | Open | Opened April 6, reported by Gulfshore Business |
| LVL Fitness | Pilates studio | Open | Its own location page takes class bookings and lists daily hours |
| Starbucks | Standalone drive-thru with indoor seating | Open | Reported open by RetailBoss on September 2 |
| Fresh Monkee | Smoothie shop | Expected, not confirmed | Franchisee projected "August, maybe September" |
| The Retreat Aesthetics | Med spa | Expected, not confirmed | Halstatt projected opening before year-end |
| Restaurant or food-and-beverage concept | Not yet announced | Space available | Halstatt is offering it to restaurant users, including outdoor dining |
Every confirmed business is coffee or exercise. The two businesses still expected, a smoothie shop and a med spa, fit the same daytime pattern. The empty space is the one that would keep the corner busy after the studios' last classes.
Two fitness studios with early hours
The first business to open was Discover Strength. Gulfshore Business reported an April 6 opening, and earlier local coverage called it the brand's first studio in Florida. Its format is short by design. The studio's location page describes 30-minute workouts led by an expert trainer, twice a week. It lists the address as 2160 Airport-Pulling Road North, Unit 107, and the phone as (239) 251-6364. The page doesn't post walk-in hours, which suits a model built on scheduled sessions.
LVL Fitness at Poinciana Place is the Pilates studio. Its schedule may be the clearest sign of who the plaza is built for. LVL lists weekday hours of 5 a.m. to 7 p.m., Saturdays from 6 a.m. to noon, and Sundays from 7 a.m. to 5 p.m. The class menu includes Full Body, FUNdamentals, Full Body + Stretch and Express 30. The studio uses Mega Pro machines and lists a changing area, grip socks, water and towels, parking and Wi-Fi. A two-week trial is offered through the same page.
Together, the two studios cover different needs. One runs two short appointments a week. The other is open on weekdays from before sunrise to early evening. Neither stays open late, and nothing else on the property does yet.
A note for map apps: the two studios share the 2160 Airport-Pulling Road North address but list different ZIP codes. LVL uses 34109 and Discover Strength uses 34105. A search by business name is more reliable than typing in the address.
The Starbucks was the developer's first choice
The Starbucks sits in its own building at 2180 Airport Pulling Road North, separate from the 2160 address. RetailBoss reported it open on September 2, 2026, and described a 2,500-square-foot drive-thru coffeehouse with indoor seating and mobile ordering. The interior has warm walnut finishes, layered artwork and a mix of seating meant for quick stops, work sessions and informal meetings. The main wall feature is a coffee-themed mural by Chalk & Brush Design. None of the sources reviewed for this piece gave an exact opening day or posted hours.
Halstatt's CEO, Katie Sproul, described the coffee tenant as the decision that shaped the rest of the leasing:
"Securing Starbucks early on was an important step in setting the tone for the type of tenants we wanted to attract."
The tenants that followed fit that tone. A drive-thru coffee shop attracts people on their way somewhere, and a 30-minute strength session or an Express 30 Pilates class fits into the same kind of trip. In the same statement, Sproul said Halstatt focused on uses that fit naturally with the professional park and serve the surrounding area. That park is the plaza's weekday base, and its office hours line up with businesses that are busiest early in the day.
The plaza has opened in stages
Poinciana Plaza hasn't opened all at once. Tenants have arrived one or two at a time, each against a projected window. The record so far:
- March 13, 2025. Halstatt's groundbreaking release on Business Wire projected the first tenants for the first quarter of 2026.
- April 6. Gulfshore Business gave this as Discover Strength's launch date, and Halstatt's June release listed the studio as open.
- Earlier projection. The same Gulfshore Business article projected late second quarter or early third quarter for LVL Fitness and The Retreat Aesthetics.
- June 2, 2026. Halstatt said Starbucks would open "this summer" and moved LVL, The Retreat Aesthetics and Fresh Monkee to "prior to year end."
- September 2, 2026. Starbucks was reported open, within the summer window Halstatt had announced. LVL Fitness is now taking bookings, though no source gives its opening date.
The smoothie shop is still in progress. A Naples Press column by Tim Aten said Fresh Monkee was still coming soon and quoted its franchisee projecting setup in "August, maybe September." As of October 10, no source reviewed here confirms that the Poinciana Plaza location has opened. Fresh Monkee's own Florida location list doesn't include a Naples store yet. No business page, address or opening announcement for The Retreat Aesthetics turned up either. Both are best treated as expected, with Halstatt's year-end target still the latest published date.
Starbucks, LVL Fitness, Fresh Monkee and The Retreat Aesthetics were all named, with projected windows, before any of them opened. As of October 10, no published announcement names a restaurant tenant or gives it an opening window.
The space still available is for a restaurant
Halstatt's release says a limited number of spaces remain, ranging from about 1,400 to 4,300 square feet. The remaining availability is aimed at restaurant and food-and-beverage concepts, including ones with outdoor dining. No restaurant or food-and-beverage tenant had been announced as signed or opened in the sources reviewed since that release.
A space of about 4,300 square feet is large enough for a full restaurant. Combined with outdoor dining, it is the only part of the project that could keep the corner busy in the evening. So far, Poinciana Plaza has been leased for the early part of the day. A restaurant would be the first business planned for later hours.
For context, Grey Oaks' own public dining page lists four venues: the Pool Cafe, the Point Grille, Estuary and Grab & GO. The club's own page doesn't mention a new dining venue for this season, so the open restaurant space at Poinciana Plaza is the main dining question nearby for now.
The release described the corner as one of Naples' busiest intersections and said the center was meant to serve both the professional park and the surrounding neighborhoods. Coffee and fitness were the right fit for the park's office tenants. The restaurant space is the part aimed at nearby residents, and it's the one tenant Halstatt hasn't named.
